     Hello everyone, hope you are having a wonderful week.

     Congratulations to all the people who visited the Recipe Den last week. We had 11,033 hits last week.

Food Tips:

In order to peal easier tomatoes and carrots, just introduce them in boiling water for a few seconds as soon as they are out you can peal the tomatoes with your hands and the carrots with a kitchen rag.
 

To turn your chicken golden color when you roast it, spread it with lemon juice all over before you introduce it in the oven
 

To get the residual cheese film off of your grater, just scrape a raw potato and a little raw onion over the soiled surface before it goes into the dishwasher. Add a little egg to the grated potato and onion and have a potato pancake for lunch.


Friday's Jack Daniels Grill Glaze

  • 1 head of garlic
  • 1 tablespoon olive oil
  • 2/3 cup water
  • 1 cup pineapple juice
  • 1/4 cup teriyaki sauce
  • 1 tablespoon soy sauce
  • 1 1/3 cups dark brown sugar
  • 3 tablespoons lemon juice
  • 3 tablespoons minced white onion
  • 1 tablespoon Jack Daniels Whiskey
  • 1 tablespoon crushed pineapple
  • 1/4 teaspoon cayenne pepper

    1. Cut about 1/2-inch off of top of garlic. Cut the roots so that the garlic will sit flat. Remove the papery skin from the garlic, but leave enough so that the cloves stay together. Put garlic into a small casserole dish or baking pan, drizzle olive oil over it, and cover with a lid or foil. Bake in a preheated 325° oven for 1 hour. Remove garlic and let it cool until you can handle it.

    2. Combine water, pineapple juice, teriyaki sauce, soy sauce, and brown sugar in a medium saucepan over medium/high heat. Stir occasionally until mixture boils then reduce heat until mixture is just simmering.

    3. Squeeze the sides of the head of garlic until the pasty roasted garlic is squeezed out. Discard remaining skin and whisk to combine.

    4. Add remaining ingredients to the pan and stir.

    5. Let mixture simmer for 40-50 minutes or until sauce has reduced by about 1/2 and is thick and syrupy. Make sure it doesn't boil over.

    Makes 1 cup of glaze.


  • Diabetic

    DIABETIC  PUNCH

     

  • 1-2 liter diet Sprite
  • 1 (46 oz.) can chilled unsweetened pineapple juice
  • 1 pkg. blueberry Kool-Aid with Nutrasweet

     Chill all ingredients and pour in punch bowl and serve. 


  • STRAWBERRIES  ROMANOFF

        -:SAUCE:-

  •  1 c. double-thick yogurt
  •  1/4 c. firmly packed brown sugar
  •  1/2 tsp. ground cinnamon
  •  1 tsp. vanilla extract
  •  2 tbsp. strawberry liqueur (optional)
  •  2 pts. fresh strawberries, about 24 oz., washed, hulled and cut into bite-size pieces.

  •    -:GARNISH:-
  •  2 tbsp. pecan pieces, lightly toasted
  •  Serves 4.  1 cup per serving.  In a small bowl, whisk sauce ingredients until fully mixed.  Refrigerate for at least 1 hour to make the sauce slightly firm. Divide berries evenly in four dessert dishes.  Spoon 1/4 cup sauce over each serving.  Top with nuts and serve immediately.

    Almond Joy Bars

  • 4 c (8 1/2-oz) shredded coconut
  • 1/4 c Light corn syrup
  • 1 package (11 1/2-oz) milk chocolate pieces
  • 1/4 c Vegetable shortening
  • 26 Whole natural almonds (1-oz)

    Line two large cookie sheets with waxed paper. Set large wire cooling rack on paper; set aside.

    Place coconut in large bowl; set aside.

    Place corn syrup in a 1-cup glass measure. Microwave on high (100%) 1 minute or until syrup boils. Immediately pour over coconut. Work warm syrup into coconut using the back of a wooden spoon until coconut is thoroughly coated.

    This takes a little time, and yes, there is enough syrup.

    Using 1 level measuring tablespoon of coconut, shape into a ball by squeezing coconut firmly in palm of one hand, then rolling between both palms. (HINT: Measure out all of the coconut then roll into balls.) Place 2 inches apart on wire racks. Let dry 10 minutes. Re-roll coconut balls so there are no loose ends of coconut sticking up.

    Place milk chocolate and shortening in a 4-cup glass measure or 1 1/2 quart microwave-safe bowl. Microwave on high 1 to 2 minutes or until mixture can be stirred smooth and is glossy; stirring once or twice.

    Working quickly, spoon 1 level measuring tablespoon of the chocolate over each coconut ball, making sure chocolate coats and letting excess chocolate drip down onto waxed paper. While chocolate coating is still soft, lightly press whole almond on top of each. Let stand to set or place in refrigerator. Store in a single layer in airtight container.

    Keeps best if refrigerated. Makes 26. 


  • Pizza Baby

     

  • Biscuit mix
  • Part of can of tomato soup
  • Parmesan cheese
  • Cold meats
  • Chopped green pepper
  • Oregano
  • Seasoning
  • Mix pizza dough and shape into a shallow dish about 12 cm across. Spoon soup into dish and top with other ingredients Place in a double wrap of heavy aluminum foil. Cook in hot coals or on rack over hot coals close to the heat.

    Sticky Bones
     

  • 1 c Vinegar
  • 1/2 c Honey
  • 2 T Worcestershire sauce
  • 1/2 c Ketchup
  • 1 t EACH salt, dry mustard, paprika
  • 1/4 t Black pepper
  • 1 Clove garlic, minced
  • 4 lb Beef ribs
  • In saucepan, combine vinegar, honey, Worcestershire, ketch- up, salt, mustard, paprika, pepper, and garlic. Cover, bring to boil, reduce heat and simmer 15 minutes.
  • In baking pan, place ribs. Cover with hot marinade, then bake ribs at 325 degrees for 1 hour, turning and basting often with marinade. Or grill over medium coals, basting and turning often, until browned, about 20 minutes.
  • Makes 4-5 servings.

  • CALZONE

     

  •  1 loaf frozen bread dough, thawed completely (6 to 8 hrs.)
  •  1 pkg. (10 oz.) frozen chopped spinach, thawed & drained
  •  1 tsp. Parmesan cheese
  •  2 tbsp. oil
  •  Garlic powder
  •  Salt & pepper
  •  1 pkg. (8 oz.) shredded Mozzarella cheese
  •  1/2 lb. stick pepperoni (sliced lengthwise at deli)
  •  1/2 lb. boiled ham
  •  1 egg

     Roll out bread dough (approximately 12 x 12 inches). Mix and spread on dough: spinach, oil, Parmesan cheese, garlic powder, salt and pepper. Layer on spinach mixture: pepperoni, boiled ham, Mozzarella cheese. Roll lengthwise, place seam down on greased cookie sheet.  Brush top with 1 egg mixed with 2 tablespoons water. Rise 15 to 30 minutes. Make diagonal slashes on top of roll, not cutting through the dough. Bake at 350 degrees for 40 minutes.
