Household Tips
Crayon marks on walls? This worked
wonderfully! A damp rag dipped in baking soda. Comes off with little
effort (elbow grease, that is)!
Whenever I
purchase a box of SOS pads, I immediately take a pair of scissors and cut
each pad into halves. After years of having to throw away rusted and
unused and smelly pads, I finally decided that this would be much more
economical. And now a box of SOS pads lasts me indefinitely! In fact, I
have noticed that the scissors get sharpened this way!
Green Bean Casserole
2 Tbsp. butter
2 Tbsp. plain flour
1 tsp. salt
1 tsp. sugar
1/2 c. onion, diced & cooked until tender
1 c. sour cream
3 (14.5 oz) cans, French cut green beans, drained
2 c. shredded cheddar cheese
1/2 c. crumbled buttery round crackers
1 Tbsp. butter, melted
Preheat oven to 350 degrees. Melt 2 Tbsp. butter in a large skillet. Stir
in flour stirring until smooth. Stir in salt, sugar, onion and sour cream.
Add the green beans and stir to coat.
Transfer to a 2 qt. baking dish. Spread shredded cheese over the top. In a
small bowl, toss cracker crumbs & butter together & sprinkle over the
cheese.
Bake for 30 min or until golden & cheese is bubbly.
Hash Brown Potato Casserole
2 lb. pkgs. frozen hash browns, thawed
1/2 c. onion, chopped
1 (8 oz) sour cream
1/4 c. butter
1/4 tsp. salt
1/4 tsp. pepper
1 can cream of chicken soup
2 c. shredded cheddar cheese
Grease 13" baking dish. In a large bowl, combine all ingredients except
hash browns. Mix well. Fold in thawed hash browns. Turn into the baking
dish. Bake at 350 degrees for 1 hour.
Can be topped with 1 c. crushed cornflake crumbs mixed with 1 Tbsp. melted
butter.
Lemon Herb Roasted Chicken
Ease of Cooking: Medium Difficulty
Serving Size: 4
Ingredients:
1 whole chicken about 3 1/2 lbs. rinsed and patted dry
2 garlic cloves, smashed
2 Tbsp. butter at room temperature
1 lemon, washed and quartered
1/3 C. dry white wine or water
1/2 teaspoon dried thyme
salt and pepper
Preparation:
Preheat oven to 425 degrees. Remove chicken from package, remove neck and
gizzards from cavity. Rinse chicken well both inside and out. Pat chicken
dry. Rub chicken all over with the garlic than then the butter. Season,
inside and out with salt and paper. Place smashed garlic and lemon
quarters
into the cavity.
Place the chicken into roasting pan and tuck the wing tips under. Roast
until all juices are clear when the thigh is pierced, about 45 to 50
minutes. Transfer chicken to platter.
Place roasting plan on the stove over medium high heat, and stir in wine,
1/2 cup water, thyme, and any juices from the matter. Bring to a boil,
scraping up the browned bits on the bottom of the pan with a wooden spoon;
cook until sauce thickens slightly, about 3 minutes. Serve sauce with
chicken. |

Carrot Soufflé
1 1/2 lbs. carrots, peeled & sliced
3/4 c. butter
3 large eggs
1/4 c. plain flour
1 1/2 tsp. baking powder
1 1/2 c. sugar
1/4 tsp. cinnamon
1 tsp. vanilla
Preheat oven to 350 degrees. Lightly grease a 2 qt. baking dish. Cook
carrots in boiling water, covered for 15 or 20 min or until very tender.
Drain. Using either a food processor or mixer, combine all ingredients and
mix well. Spoon into prepared dish. Bake for 50-60 min. or until set &
lightly browned. Serve immediately. May be made ahead and refrigerated
until ready to bake.
Pineapple Au Gratin
Serving Size : 8
Categories : Fruit
30 ounces pineapple chunks in juice -- drained
2 cups cheddar cheese -- shredded
1 cup sugar
6 tablespoons flour
20 butter crackers (like Ritz) -- crushed
1 stick butter or margarine -- melted
Stir together pineapple, cheese, sugar and flour; mix well.
Pour into a buttered 1.5 qt. baking dish.
Top with cracker crumbs and drizzle with melted margarine.
Bake, uncovered, at 350ºF. for 25-30 mins.
Spaghetti and Lemon Zest and Chives

Notes:
This is a delicious dish that is easy to make. It goes well as both a side
dish and a main dish. It takes about 15 minutes to prepare.
Ingredients:
1 lb. spaghetti or thin spaghetti
zest of 1 lemon
juice of 1 lemon
1 stick of butter
1 C. Parmesan cheese
2 Tbsp. chopped chives
salt and pepper to taste
Preparation:
Prepare pasta according to package directions. Zest and juice lemon into a
large bowl. Stir in 1 stick butter, cut into small pieces and add grated
Parmesan cheese. Add drained pasta to lemon sauce, and sprinkle in 2
tablespoons chives, you can use fresh or dried. Salt and pepper to taste.
Toss well and serve.
La Comedia's Famous Sweet Potato Soufflé
Recipe
4 cups mashed sweet potatoes
1 cup sugar
2 eggs
1/2 cup milk
1/2 tsp. salt
1/3 stick butter or margarine (melted)
1 tsp. vanilla
Mix well
Pour into buttered pan
Topping: 1 cup brown sugar
1/2 cup flour
1/3 cup butter or margarine (melted)
1 cup pecans
Crumble topping evenly over potato mixture. Bake at 350° for 35-45 minutes
uncovered.
