Household Tips

Easy eyeglass protection....To prevent the screws in eyeglasses from loosening, apply a small drop of Maybelline Crystal Clear nail polish to the threads of the screws before tightening them.

Coca-Cola cure for rust...Forget those expensive rust removers. Just saturate an abrasive sponge with Coca Cola and scrub the rust stain. The phosphoric acid in the coke is what gets the job done


Kahlua Coffee Liqueur

2 Cups water
1 1/2 Cups granulated sugar
1 1/2 Tablespoons instant coffee
2 cups vodka
1 1/2 Tablespoons vanilla

1. Combine water, sugar, and coffee in a covered saucepan over high heat. Bring to boil, and continue to boil for 10 minutes. (Do not let it boil over.)
2. Remove from heat and cool 5 min.
3. Add vodka and vanilla. Stir. (Cover pan at this stage or your alcohol content will boil away).
4. Store in an empty 750 ml. liquor bottle with a screw top or re-sealable lid. The longer it sits the better it gets, and it tastes VERY much like the real thing.
Note: You can substitute Everclear for the Vodka. Just use a little less.


Strawberries and Cream Cake

2 3/4 cups cake flour
2 1/2 teaspoons baking powder
2 cups sugar
1 (3-ounce) package strawberry flavored gelatin
1 cup butter, softened
4 eggs
1 cup milk
1 teaspoon vanilla extract
1/2 cup pureed strawberries
1 1/2 cups heavy whipping cream
2 tablespoons sugar
1/2 teaspoon vanilla extract
1 1/2 cups strawberries, sliced
1 1/2 cups strawberries, quartered
 

Cream cheese frosting (recipe follows)
Preheat oven to 350*F (175*C). Grease and flour three 9-inch round cake pans. Mix flour and baking powder together and set aside. In a large bowl, beat sugar, gelatin and butter until fluffy. Add eggs one at a time, beating well with each addition.
Beat in flour and milk alternately. Fold in 1 teaspoon vanilla and pureed strawberries. Divide equally into three 9 inch round cake pans. Bake for 25 minutes or until wooden pick inserted into center of cake comes out clean. Cool for 10 minutes in the pans, then remove from pans and cool completely on wire racks.
 

To make the filling:
Beat whipping cream, 2 tablespoons sugar and 1/2 teaspoon vanilla on high with electric mixer until stiff. Fill each layer with 1/3 of the whipped cream and 3/4 cup sliced strawberries. Frost sides of cake with Cream Cheese Frosting. Pipe an edge of frosting around cake top. Spread remaining whipped cream on cake top. Top with quartered strawberries.
Cream Cheese Frosting:

1 (8-ounce) package cream cheese, softened
1/2 cup butter, softened
1 (1-pound) box powdered sugar, sifted
1 teaspoon vanilla
Beat cream cheese until smooth. In separate bowl, combine sugar and butter; mix well. Add to cream cheese. Stir in vanilla and beat until smooth.
Makes one 9-inch 3 layer cake.

Cheese Danish

2 can of crescent rolls
2 pkgs. 8 oz. cream cheese
1 cup sugar
1 egg yoke
1 tsp. vanilla

Press one can of crescent rolls in bottom of 13 x 9 pan. (Spray pan with PAM) Mix cream cheese, sugar, egg yoke, and vanilla together well. Smooth over top of crescent. Press remaining can of crescent rolls on sheet of wax paper. Lay on top of filling. Tuck down sides of crescent. Bake at 350 for 25-30 minutes. Cut into squares after Danish is cooled.

Mexican Chef Salad

1 lb extra lean ground beef
1 tbsp chili powder
1 can kidney beans -- rinsed and drained
1 onion -- chopped
2 tomatoes -- chopped
1 head lettuce -- torn
2 c shredded cheddar cheese
1 avocado -- chopped
1 bag tortilla chips -- coarsely crushed
Dressing:
1/2 c catsup
1/4 c mayonnaise
1/4 c sour cream
1 tbsp chili powder

Mix together dressing ingredients and chill. Cook ground beef, drain and mix with 1 tbsp of chili powder. Mix with remaining salad ingredients (except chips). When ready to serve, pour dressing over salad and toss. Top with crushed tortilla chips and serve. Bon Appetit, Betsy Burtis


Heavenly Onion Casserole
6 Servings

2 tb Butter
3 md Sweet onions
8 oz Fresh mushrooms
1 c Shredded Swiss cheese
1 can Cream of mushroom soup
1 can Evaporated milk
2 ts Soy Sauce
8 sl Thin sliced Swiss cheese
8 sl French bread

In large skillet melt butter and sauté onions and
mushrooms in butter. Place onions and mushrooms in 2 qt. casserole dish. Sprinkle with shredded cheese. Combine soup, soy sauce evaporated milk and pour over cheese. Layer bread on top of that and top with slices of cheese.. cover and refrigerate 4 hrs. Bake fro 30
min. uncovered for 20 min. May substitute your favorite cheese. Pam Cobb


Cranberry Almond Bread

2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1/4 cup milk
1/2 cup butter, melted
1-1/2 teaspoons almond extract
1 1/2 cups fresh or frozen cranberries
1 tablespoon sugar
1/4 cup sliced almonds

Preheat oven to 375 degrees. Grease an 8-1/2-by-4-1/2-by-4-inch loaf pan. Combine flour, sugar, baking powder and salt in a medium mixing bowl. Set aside.
Combine egg, milk, butter, almond extract and
cranberries in a medium mixing bowl. Add to dry
ingredients, mixing just until the dry ingredients
are moist. Spread batter in loaf pan. Sprinkle
with sugar and almonds. Bake for 45 minutes. Reduce heat to 350 degrees. Bake for 30 minutes or until a toothpick inserted  into center of loaf comes out clean. Makes one loaf.
