Food Substitutions

Food Amount Substitution
Baking Powder 1 teaspoon 1/4 teaspoon baking soda plus 1/2 teaspoon cream of tartar.
OR 1/4 teaspoon soda plus 1/2 cup sour milk.
Butter 1 cup 1 cup margarine
OR 1 cup (scant) hydrogenated fat plus 1/2 teaspoon salt.
OR 7/8 cup vegetable shortening.
Catsup or chili sauce   1 cup tomato sauce plus 1/2 cup sugar plus 2 Tablespoons vinegar.
Chocolate, Unsweetened 1 square (1 oz) 3 tablespoons cocoa plus 1 tablespoon vegetable shortening, butter, or margarine.
Cornstarch 1 Tablespoon 2 Tablespoons flour.
Cream, heavy 1 cup
(not for whipping)
3/4 cup sweet milk plus 1/3 cup butter.
Cream, light 1 cup 7/8 cup sweet milk plus 3 tablespoons butter.
Flour, all-purpose 2 tablespoons
(for thickening)
1 tablespoon cornstarch or 1 1/3 tablespoons quick-cooking tapioca.
OR   1 Tablespoon arrowroot.
Flour, cake 1 cup sifted 1 cup minus 2 tablespoons (7/8 cup) all-purpose flour, sifted.
Garlic 1 clove fresh 1/8 teaspoon garlic powder.
Herb, fresh 1 Tablespoon 1 teaspoon dried.
Honey 1 cup 1 to 1 1/4 cups sugar plus 1/4 cup liquid.
Milk, sour 1 cup 1 cup sweet milk plus 1 tablespoon vinegar or lemon juice.
Milk, sweet 1 cup 1/2 cup evaporated milk plus 1/2 cup water
OR 1 cup reconstituted nonfat dry milk plus 2 teaspoons butter.
Mustard, dry 1 Teaspoon 1 Tablespoon prepared mustard.
Honey 1 cup 7/8 cup buttermilk plus 2 Tablespoons melted shortening, whipped.
Syrup, corn 1 cup 1 cup sugar plus 1/4 cup liquid.
Yeast, compressed 1 cake 1 package or 2 teaspoons active dry yeast.

Self-Rising Flour:

4 cups of flour, 2 teaspoons salt, 2 tablespoons double-acting baking powder. Mix all ingredients well. Store in lightly covered can or jar and use soon. Use in any recipe calling for self-rising flour.

BAKED PARMESAN FISH

1 lb. fish fillets
1/2 tsp. salt
1/8 tsp. pepper
1/2 c. dairy sour cream
2 Tbsp. grated Parmesan cheese
1/4 tsp. paprika
1/8 tsp. dried tarragon leaves
3 green onions with tops, sliced

Roll up fish fillets and place, seam side down, in un-greased 8-inch square baking dish. Sprinkle with salt and pepper. Mix sour cream, cheese, paprika and tarragon and spread over fish. Cook, uncovered, in 350 degrees oven until fish flakes easily with fork, 20 to 30 minutes. Sprinkle with onions. Garnish with cherry tomatoes if desired. Makes 6 to 8 servings.

Baked Sweet Potatoes & Apples

Serving Size : 4

Tried and liked

1 pound sweet potatoes
2 cups Granny Smith apple -- peeled, thinly sliced
1/4 cup butter -- or margarine
1/3 cup raisins -- optional
1/3 cup slivered almonds -- optional
SUGAR MIXTURE
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt

Preheat oven to 375°
Steam potatoes with skins on (actually always peel them first because I find that easier). for about 20 minutes (potatoes will be only partially cooked). Peel and slice potatoes 1/2 inch thick.

In a bowl mix all "Sugar Mixture" ingredients together.

In a 2-quart casserole (lightly greased), place a layer of potatoes.
Cover with half the apples. Sprinkle with half the Sugar Mixture.
Repeat layers and dot with butter. If using, sprinkle with raisins
and/or almonds.

Cover and bake 35 minutes then uncover and bake another 10 minutes.

Banana Cranberry Bread

1 1/2 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 1/4 cup fresh cranberries
1 1/2 cup bananas, mashed
1/2 cup sugar (I will increase to 3/4 next time. not sweet enough for me)
1 egg
1 teaspoon vanilla
1/2 cup oil

Preheat oven to 350°
Mix flour, baking powder, baking soda and cranberries. Add bananas, sugar, egg, vanilla and oil, mixing thoroughly. Bake 35 minutes in greased 8 inch square pan.

Lamb Stew with Carrots, Zucchini, and Cranberries

COMPANY SWEET POTATOES

5 lb fresh sweet potatoes
1/2 C sugar
1/2 C milk
2 eggs, beaten
1 tsp vanilla
1 tsp pumpkin pie spice
1/3 C melted butter

TOPPING:
1 C coconut, flaked
1 C pecans, chopped
1/2 C brown sugar
1/3 C melted butter
1/3 C flour

Cook or bake sweet potatoes. Peel and mash. Mix in next six
ingredients and put into a greased 9x13" pan. Mix dry ingredients and sprinkle over potato mix. Bake 30 minutes at 375.
