Well everything is change over finally. I am still adding new recipes to the Recipe Den, but everything is up and running, and all the newsletter changes have been made.

Pet's Corner

Cheese and Bacon Dog Biscuits

• 3/4 cup Flour
• 1/2 teaspoon Baking Soda
• 1/2 teaspoon Salt
• 2/3 cup Butter
• 2/3 cup Brown Sugar
• 1 Egg
• 1 teaspoon Vanilla extract
• 1 1/2 cups oatmeal
• cup Cheddar Cheese --shredded
• 1/2 cup Wheat Germ
• 1/2 pound Bacon -- or bacon bits

Combine flour, soda and salt; mix well and set aside. Cream butter and sugar, beat in egg and vanilla. Add flour mix mixing well. Stir in oats, cheese, wheat germ and bacon. Drop by rounded tablespoon onto un-greased baking sheets. Bake at 350 for 16 minutes. Cool and let the critters enjoy!

Chicken Flavored Dog Biscuits

• 2 1/2 teaspoons dry yeast
• 1/4 cup warm water
• 1 teaspoon salt --optional
• 1 egg
• 1 cup chicken broth --slightly warmed
• 1 cup whole wheat flour
• 1/2 cup rye flour --optional
• 1/2 cup cornmeal
• 1 cup cracked wheat
• 1 1/2 cups all-purpose flour

▪ In a large bowl, dissolve yeast in warm water.
▪ Add salt, one beaten egg, and the warmed chicken broth.
▪ Add all flour except the all-purpose flour and mix well.
▪ Slowly add all-purpose flour until a stiff dough is formed and it
   can be kneaded by hand.
▪ Knead for only a couple minutes, just enough to get the dough
   to hold together.
▪ Roll out dough about 1/4" thick and cut with cookie cutters.
▪ Place biscuits on a large cookie tray and place directly in a
  300 degree oven, they don't need to rise.
▪ Bake for 45 min. and then turn off the oven.
▪ You can let them sit in the oven overnight and in the morning
   they will be real hard and good for your dog's teeth.
▪ You could also vary this recipe by adding milk for a milk-bone
   type biscuit or shortening for a little extra fat.
▪ Try different liquids and even honey or molasses, Check with
   your veterinarian for any other nutritional suggestions.

QUICK BEEF AND MUSHROOM RAGOUT

1 lb. top sirloin grilling steak
1/4 cup all-purpose flour
1 tsp. EACH salt and pepper
2 tbsp. vegetable oil
2 cups quartered mushrooms
2 carrots, sliced
1 onion, chopped
2 cloves garlic, minced
1 tsp. dried thyme
1 1/2 cups beef stock
1 tbsp. wine vinegar
1/4 cup fresh parsley, chopped

1. Slice steak across the grain into thin strips. In plastic bag,
    shake together flour, salt and pepper. Add steak strips and toss to
    coat evenly.
2. In large saucepan, heat half of the oil over medium-high heat,
    brown steak in batches. Transfer to plate.
3. Add remaining oil to pan and reduce heat to medium. Cook
    mushrooms, carrots, onion, garlic and thyme, stirring for two  
    minutes.
4. Add beef stock and vinegar and bring to a boil. Return steak and 
    any accumulated juices until vegetables are tender, about 12
    minutes.
Garnish with parsley.

Note: We thought this had a tad too much thyme and would reduce it to a half teaspoon next time.

Serves 4 Good with butter poppy seed noodles.

Crocked Orange Chicken

6 Skinless Boneless Chicken-Breasts
1/2 tsp Ginger
1 tsp Salt
Pepper
8 oz Orange Juice, From Frozen-Concentrate
1 1/2 cup Coconut, Shredded
2 cup Mandarin Oranges, Segments
Or fresh orange segments
2 Green onions, chopped
Cooked rice, hot

Procedures:
1- Put chicken, ginger, salt, pepper & frozen orange juice in
    slow-cooking Crockpot and cook on low 6 hours.
2- Serve chicken on hot cooked rice on platter.
3- Top with coconut, orange segments and green onions.
4- Serve chicken liquid in gravy boat, if desired.

Broccoli Salad

1 large bunch of broccoli
10 strips of bacon
1/2 cup golden raisins
1/2 cup chopped sweet onion
1 cup mayo
2 tablespoons apple cider vinegar
1/4 cup white sugar

The night before serving, mix together mayo, vinegar and sugar. Store in fridge overnight. Chop bacon into 1/4 inch pieces and fry until crisp. Drain and set aside.
Wash broccoli thoroughly and cut flower parts into bite-size
pieces. Discard stalk. Mix broccoli, raisins and onion together. Before
serving, pour dressing over broccoli and toss lightly. Sprinkle bacon on top.
I've used light mayo and "regular" raisins with no problem. I've also
mixed the dressing right before pouring over broccoli and it's fine,
too. Just a little grainy until the sugar melts.

"Can't Leave Alone Bars"

1 box (18.25 oz) white cake mix
2 large eggs
1/3 cup oil
1 can (14 oz) sweetened condensed milk (not evaporated)
1 cup (6 oz) semisweet chocolate chips
1/2 stick (1/4 cup) butter, cut small

Heat oven to 350 degrees. Grease a 13x 9 x 2-in. baking pan.
Beat cake mix, eggs and oil in a large bowl with mixer until
blended. Press 2/3 in pan. Microwave condensed milk, chocolate,
and butter in a bowl on high 1 minute or until mixture is smooth when stirred. Pour over crust. Top with teaspoonfuls reserved cake mixture. Bake 20 to 25 minutes until lightly browned.
Cool; cut into bars.
