Baked Sweet Potatoes & Apples Serving Size : 4 Categories : Make-Again Side-dish Tried and liked 1 pound sweet potatoes 2 cups Granny Smith apple -- peeled, thinly sliced 1/4 cup butter -- or margarine 1/3 cup raisins -- optional 1/3 cup slivered almonds -- optional SUGAR MIXTURE 1/2 cup brown sugar 1/2 teaspoon cinnamon 1/4 teaspoon salt Preheat oven to 375° Steam potatoes with skins on (actually always peel them first because I find that easier), for about 20 minutes (potatoes will be only partially cooked). Peel and slice potatoes 1/2 inch thick. In a bowl mix all "Sugar Mixture" ingredients together. In a 2-quart casserole (lightly greased), place a layer of potatoes. Cover with half the apples. Sprinkle with half the Sugar Mixture. Repeat layers and dot with butter. If using, sprinkle with raisins and/or almonds. Cover and bake 35 minutes then uncover and bake another 10 minutes.
