LEFTOVER TURKEY AND VEGETABLES 1/2 lb. mushrooms, sliced 1 eggplant, diced 1 zucchini, diced 1 onion, thinly sliced 2 cloves garlic, minced 2 cups tomato, diced and seeded salt and pepper to taste 1 1/2 tsp. oregano 3 cups cooked turkey (or chicken), cubed Spray pan with Pam. Combine all ingredients except turkey. Cover and simmer 10 minutes, stirring frequently. Stir in cubed turkey. Cook and stir uncovered until most of the liquid has evaporated.
