Baked Chicken Parmesan 4 chicken breasts (boneless, skinless) 5 T. melted butter 1 Tbl. Dijon mustard 3/4 cup dried Italian style bread crumbs 1/2 cup grated Parmesan cheese 2 Tbs. chopped dried parsley 1 tsp. dried basil Preheat oven to 400 degrees Lightly grease a 9 x 15 baking dish. In a shallow bowl, combine butter with the mustard. In another bowl, blend together bread crumbs, cheese, parsley and basil. Dip chicken pieces first into the mustard mixture, and then coat with the bread crumb mixture. Place in the baking dish. Bake uncovered, for 45 minutes I didn't have Dijon mustard, so I used Honey mustard and it was good. Vaughndell, in beautiful state of WA.
